3cupsof diced potatoesabout 1 inch -- if using russet potatoes, peel and wash them first.
3tablespoonsof good olive oil
1tablespoonof spicy brown mustard
¼teaspooncrushed red pepper flakesoptional
Mix all ingredients in a bowl with a whisk.
Make sure all of the herbs and spices are well incorporated.
Toss potatoes with the herb,oil and mustard mixture to coat the potatoes.
Spread on a baking sheet wtih a rack for best results.
I use a rack in my sheet pan to allow air to circulate around the potatoes.
