Roasted Potatoes

Description

Make these roasted potatoes anytime you want a simple, flavor-filled side dish for dinner or to just snack on!

Preheat Oven to 425 degrees

Bake for 25-35 minutes or until golden brown


Ingredients

Scale
  • 3 cups of diced potatoes (about 1 inch — if using russet potatoes, peel and wash them first.)
  • 3 tablespoons of good olive oil
  • 1 tablespoon of spicy brown mustard
  • ½ tablespoon granulated garlic
  • ¼ teaspoon dried basil
  • ¼ teaspoon dried thyme
  • ¼ teaspoon dried oregano
  • ¼ teaspoon crushed red pepper flakes (optional)
  • ¼ teaspoon black pepper
  • ½ teaspoon salt

Instructions

  1. Mix all ingredients in a bowl with a whisk.
  2. Make sure all of the herbs and spices are well incorporated.
  3. Toss potatoes with the herb,oil and mustard mixture to coat the potatoes.
  4. Spread on a baking sheet wtih a rack for best results.

Notes

I use a rack in my sheet pan to allow air to circulate around the potatoes. If you don’t use a rack in your sheet pan, make sure to turn the potatoes at the 15 minute mark for even cooking.

Not a fan of spicy?

Just eliminate the red pepper flake and use regular stone ground mustard instead of spicy brown mustard.
