The potato. One of the most versatile foods on the planet. This recipe takes this humble tuber and turns it into a flavor bomb side dish that compliments just about any protein or vegetable. I developed this recipe to amp up the flavor of my Roasted Potato and Rotisserie Chicken Salad.
I took my favorite roasting herbs and spices and added spicy brown mustard and red chile flakes and bam! FLAVOR!

Almost any herb or spice you like can turn these roasted potatoes into heavenly pillows of yum. The key is to balance your flavors with salt and heat to keep those tastebuds humming.
Some popular herb combos are:
- Thyme + Basil + Oregano
- Smoked Paprika + Garlic + Coriander
- Garlic + Dill + Mustard
- Oregano + Cumin + Chili Powder
- Rosemary + Garlic + Red Peppers
Add salt and pepper to any combo above and you’ve got a delicious flavors to coat your potatoes with.

Roasted Potatoes
Ingredients
- 3 cups of diced potatoes about 1 inch -- if using russet potatoes, peel and wash them first.
- 3 tablespoons of good olive oil
- 1 tablespoon of spicy brown mustard
- ½ tablespoon granulated garlic
- ¼ teaspoon dried basil
- ¼ teaspoon dried thyme
- ¼ teaspoon dried oregano
- ¼ teaspoon crushed red pepper flakes optional
- ¼ teaspoon black pepper
- ½ teaspoon salt
Instructions
- Mix all ingredients in a bowl with a whisk.
- Make sure all of the herbs and spices are well incorporated.
- Toss potatoes with the herb,oil and mustard mixture to coat the potatoes.
- Spread on a baking sheet wtih a rack for best results.
