Steamed artichokes are both delicious and nutritious. They make the perfect appetizer or accompaniment to just about any meal. You’ll find artichokes in the summer and fall so you can be sure to get your fill when they are in season. What I love about this recipe is how quickly the instant pot steams the artichokes to perfection. Depending on the size of your artichokes and instant pot, you’ll be able to steam up to 4 in no time.
Steamed Artichoke Nutritional Value
Artichokes are fiber powerhouses and they are low in calories (unless you dip them in butter ;-). Check out a few of their nutrition numbers to see if they would be a good fit to your diet:
- An average large artichoke has 25 calories in the edible parts
- No fat
- 1 gram of sugar
- 2 grams of protein
- 6 grams of carbs
- 5 grams of fiber
In addition to their pretty impressive macros, they also contain helpful bioactive compounds. Filled with healthy phenols and anthocyanins, artichokes are generally healthy for people who want to support cell health, increase antioxidant protection, improve enzyme activity in the body, as well as offset oxidative stress. Studies show that the nutrients in artichokes have been helpful in improving digestive health, lowering cholesterol, maintaining a healthy weight, improving the immune system and reducing inflammation in the body.
HOW TO MAKE INSTANT POT STEAMED ARTICHOKES
STEP 1: Wash and trim the artichoke
First things first, wash the artichoke. I like to soak the artichoke in room temp water with for about 30 minutes. Make sure to agitate the artichoke in the water a few times to get the water between the leaves.
Next, set it aside to drain with the stalk or bottom facing up. This will allow the artichoke to drain from the inside out.
Dry the outer leaves of the artichoke and snip off the tops of the leaves with a pair of kitchen scissors. This makes it easier to handle and it allows the steam to penetrate the leaves a little easier.
Next, you will also want to take a sharp knife and cut the stem of the artichoke close to the body. I also like to take the last row of leaves off, especially if they are damaged from handling or shipping. Just snip them off with your scissors. I also take the sharp knife and cut the top of the artichoke off about 1/4 of the way down.
STEP 2: Set up your electric pressure cooker.
I am a fan of the Instant Pot but any electric pressure cooker will work for this recipe. Set up is easy. These instructions refer to the Instant Pot so adapt to fit your pressure cooker.
- Add 1.5 cups of filtered water to the bottom of the Instant Pot.
- Add 2-3 slices of fresh lemon to the water.
- I also add 1 to 2 crushed cloves of garlic to the water. You will not taste a lot of garlic but this provides a nice hint of garlic flavor.
- Put your wire rack in the bottom of the pot.
STEP 3: Add the trimmed artichokes to the pressure cooker and set the timer.
- Place the artichokes top side down on to the wire rack.
- Place the lid on the pressure cooker and make sure to close the vent.
- Set the pressure cook timer to 10 minutes.
- Allow the pressure cooker to naturally release after the 10 minute cook time.

Ingredients
- 2 Medium to Large Artichokes
- 1.5 cups of water
- Lemon Slices
- 1–2 crushed garlic cloves
Instructions
- Wash and trim the artichokes
- Set up Instant Pot with the roasting rack or use a steamer basket
- Add washed and trimmed artichokes to the instant pot
- Put the lid on and close the venting top
- Set the pressure cook time for 10 minutes and start
- Once the time is up, let the pressure cooker vent naturally for at least 5 minutes
- Remove the steamed artichokes and prep for serving
- Serve with a simple drawn butter, ranch dressing or my lemony mayo dipping sauce
Notes
- You can serve the artichoke whole and let each person decide if they want to attack the artichoke heart on their own or you can slice the artichoke in half before serving and remove the heart and dice up to serve on the side.
- If you serve it whole, provide a knife and fork to cut up the artichoke heart.
- Make sure to provide a discard bowl for eaten leaves and artichoke heart fuzz and thistle.
